The time bonus gives extra points for whatever time is left on the clock. The faster the player completes the word, the more points they will receive. The other bonus is a gold coin bonus that is given for all of the empty space left on the board. The fewer tiles that are left behind, the more gold coins are received. Sinking the letters in word order will get you the biggest possible bonus.
Planning it out so the letters fall in order is worth the time, as the bonus for doing this is quite large. It is important to get to the last two levels as fast as possible. Levels four and five are more difficult and will require more time. Saving your chopsticks for these levels is also a smart move.
